When I go out for cocktails, I love watching the bartenders make drinks. I’m mesmerized by those professionals who can eyeball the measurements perfectly. According to my father, who worked his way through graduate school as a bartender at the original T.G.I. Friday's, making perfect drinks without measuring means they can churn 'em out faster than stopping to meticulously measure each ingredient.
