Celebrate Earth Day with these delicious low-waste recipes

Earth Day is the perfect opportunity to go green with delicious plant-based recipes. What better way to celebrate the environment than by reducing your carbon footprint with sustainable and low-waste meals? From plant-based cookies to plant-based smoothies, there are many recipes that are both eco-friendly and easy to make. If you’re looking for simple meals that benefit the environment this Earth Day, here are five tasty, low-waste recipes that you and the planet will love.

1. Plant-based Earth Day cookies

These plant-based cookies are love at first bite. Begin by adding a flax egg (vegan egg substitute), oil, nut butter, vanilla and coconut sugar to a bowl. Next, fold in oat flour, baking powder and salt. Once thoroughly combined, divide the mixture into two bowls. Then mix matcha powder in one bowl and blue spirulina powder (a type of algae) in the other. Once the colors are combined, grab a pinch of the blue and green dough, roll it into a ball, and place it on a baking sheet lined with parchment paper. Pop them in the refrigerator for 20 minutes before baking at 350 degrees Fahrenheit for 15 minutes.

2. Vegan zero-waste gluten-free green juice Earth Day muffins

Vegan, gluten-free and zero-waste, these muffins can do it all! First, mix gluten-free flour with baking soda, cinnamon, nutmeg and salt. Next, combine the dry ingredients with melted vegan butter, maple syrup, apple sauce, fresh apple and celery juice pulp along with vanilla extract. Transfer the batter to a muffin tin with cupcake liners. Then bake at 375 degrees for 35 minutes. Finally, glaze the muffins with nut or seed butter combined with maple syrup, and sprinkle on some crushed pistachios.

3. Protein-packed Earth Day vegan “wrap”

Get back to your roots with this vegan wrap. Start by taking a piece of Swiss chard and cutting off most of the stem. Next, cover the Swiss chard with curry bean spread. Then add alfalfa sprouts and scallions, followed by avocado and hot pickled peppers. Finally, roll it up and enjoy it on its own, or make a sandwich using Ezekiel bread.

4. Earth Day nopales mango salad

This salad is brimming with texture and flavor. First, add arugula and boiled diced nopales (a type of cactus) to a bowl. Next, mix in chopped purple onions, followed by mango slices, diced orange bell peppers, a diced serrano chili pepper and diced Persian cucumbers. Then squeeze on some lime juice, and add a pinch of Himalayan salt. Stir thoroughly before serving.

5. Earth Day green juice smoothie

No Earth Day recipe list would be complete without including green juice. All you have to do is add celery, cucumbers, spinach, pineapple and coconut water to a blender for this simple recipe. Blend the ingredients thoroughly to form a fresh, green purée. Then pour it into a glass and enjoy!
