Each year when springtime rolls around, I start the process of ‘summerizing’ myself for those upcoming trips to the beach. Unfortunately, there are a few things that are hard to give up. It’s no secret that eating a ton of rice or noodles can bring the bloat, but sometimes a plate of pasta is just plain necessary!

Here are five international noodle recipes for those times you just need a noodle fix.

Yaki Udon

This flavour-packed stir-fried udon dish reminds me of eating with my family at an izakaya in rural Japan. The springy noodles do such a great job of soaking in the simple and savory sauce. Top with scallions for a bit of crunch and katsuobushi (bonito flakes) for added umami.

Vegan Dan Dan Noodles

Substitute meat for mushrooms in this play on the traditional Chinese dan dan noodles recipe. The diced mushrooms add meatiness and bulk up the dish, while delivering an unreal earthy depth of flavor. Using a bit of peanut butter leaves you with a dish that stradles the line between dan dan noodles and sesame noodles from your favourite take out spot. Warning: this dish is spicy!

Spaghetti Vongole with Shiitake Mushrooms

Healthier Hawaiian Macaroni Salad

My favorite side dish with fried chicken (or at any cookout or BBQ for that matter) is Hawaiian macaroni salad. I’m a sucker for the creamy, tangy sweetness. For this version I used light mayo, Greek yogurt and milk to achieve the creaminess of the original, while keeping it fitting-into-your-bikini-friendly. Delicious!
