This Genius Technique Makes Caramel Sauce Fluffy and Spreadable

Caramel sauce is decadence in drizzly, luscious form. It’s sweet and silky and takes everything up a notch, from ice cream sundaes to fruit platters. But while it’s great for drizzling, its typical state isn’t made for topping cakes or cupcakes—until now. Recently, people on social media have discovered a way to make it fluffy and spreadable.

How to Make Fluffy, Spreadable Caramel Sauce

If you make a homemade caramel sauce, you can whip it into a fluffy topping that’s a bit like a dense whipped cream. Start with a recipe such as this easy caramel sauce. After making the sauce, transfer it to a glass container and allow it to cool completely in the refrigerator for at least a few hours or overnight. (Warm caramel will not whip as well as chilled caramel.)

When the caramel is thoroughly chilled, transfer it to a bowl and use a hand mixer to whip it as you would with whipped cream. The caramel will lighten in color within a minute and form soft peaks. (If it does not thicken within one minute of whipping, stick it back in the refrigerator for 30 minutes to firm up before continuing to whip.) The whipped caramel is perfect for spreading on cakes as a thick frosting.

Of course, we had to see if there was a shortcut here and if this would work with store-bought caramel sauce. Unfortunately, despite high hopes, the store-bought sauce wouldn’t whip the way we’ve seen homemade caramel sauces do. Whipping store-bought caramel sauce did result in a lighter-colored caramel, but the whipping itself did not incorporate air into the sauce, creating the light texture we were looking for. Instead, it drizzled more loosely from a spoon. I chilled the caramel sauce in the refrigerator and the freezer in subsequent attempts to get the store-bought caramel sauce to whip but had the same result.

Luckily, the technique also works on other spreads. According to commenters on the TikTok video, you can also whip peanut butter and honey to an airy consistency. And if you don’t already have a homemade caramel sauce on hand but this has got you in the ultimate caramel mood, why not make a caramel cake—complete with fluffy caramel frosting.
