I recently had the opportunity to cook with the new cast iron Always Pan, and it’s quickly become one of my new favorite pieces of cookware. For starters, the pan is really beautiful. If you thought the original Always Pan was good-looking, I’m telling you the cast iron Always Pan is even more stunning. The enameled exterior is sleek and shiny, and it just looks so chic on the stovetop. Also worth noting, the cast iron Always Pan is significantly heavier than the original Always Pan. That shouldn’t be surprising given that the new pan is made from cast iron, but it’s still important to be aware of.
When it comes to cooking with the cast iron Always Pan, it really is a pleasure. So far, I’ve used the pan to cook beef, chicken and salmon, and they’ve all turned out beautifully with a nice crisp exterior. Unlike the original Always Pan which has an insanely good nonstick coating which makes it perfect for scrambled eggs and sautéing veggies, meats can stick to the cast iron Always Pan. However, that’s easily avoidable if you simply follow the cooking instructions, which explain that you do need to use a bit of oil in the pan while it’s heating up and then resist the urge to move around your meats until they’re ready. I know it’s hard, but just do it. Everything I cooked released perfectly from the cast iron Always Pan without any sticking at all when I just let it do its thing and didn’t poke it until it was done on one side.
Next, I plan to try using the cast iron Always Pan for an oven recipe. I’ve never made a Dutch baby (basically a giant pancake cooked in the oven), but I’m inclined to give it a try because they look so yummy, and they seem easy enough to pull off in the cast iron Always Pan. I may also try baking off a batch of biscuits in the pan, too.
