TikToker turns leftover coffee into dessert: 'I love this'

TikToker Ereka Vetrini (@erekasfood) shared her brilliantly creative hack for turning leftover coffee into a delicious dessert.

Vetrini is a TikToker and chef who describes herself as “sometimes sweet, sometimes savory,” who shares tasty recipes and fun cooking hacks. While Vetrini shares a wide variety of hacks on TikTok, she has one hack in particular that’s likely to appeal to coffee lovers — as well as anyone who hates wasting leftovers! The hack? Turn leftover coffee into a tasty frozen treat called a granita!

The video starts with a shot of the finished coffee granita. It consists of coffee-flavored ice topped with homemade whipped cream.

“Today, we’re turning leftover coffee into dessert,” Vetrini explains. “We’re making granitas.”

Vetrini starts by placing the pot of leftover coffee on her kitchen counter and pouring in sugar. “While the coffee is still hot, mix in the sugar,” Vetrini recommends. “[Use] about one and a half tablespoons per cup [of coffee].”

Then, for anyone who is of legal drinking age, Vetrini recommends adding a splash of alcohol. “If you’re over the age of 21, you can add Baileys, Kahlua … I’m going to add a little amaretto,” she says, pouring amaretto liqueur into the coffee pot and mixing it with a whisk.

Next, Vetrini lets the coffee mixture cool until it reaches room temperature. Then she pours it into an ice cube tray and places it in the freezer. While the coffee freezes, she makes homemade whipped cream out of heavy cream, confectioners’ sugar and vanilla extract.

Once the coffee is frozen, Vetrini places the cubes in a food processor and blends them up. Finally, she pours the coffee ice into a chilled glass and tops it with the homemade whipped cream and a bit of cinnamon before digging in.

Viewers applauded Vetrini’s simple coffee hack.
