TikTokers share cozy casseroles for fall and winter

Looking for a cozy dinner that’s easy to make? Try a casserole! When the weather starts getting chilly, few dishes hit the spot like a delicious casserole. Easy to make in large batches, and typically quick to throw together, casseroles are a great option for weeknight dinners, meal prep and large gatherings. Here are five casserole recipes from TikTok that show exactly why the dish is peak comfort food.

1. Low-carb loaded broccoli and cauliflower casserole

This cheesy broccoli and cauliflower casserole might be low on carbs, but it has tons of flavor! To make it, simply microwave some frozen broccoli and cauliflower florets. Then cook and crumble up some bacon. Next, grab a bowl and mix cream cheese, mayonnaise and spices. Mix in the broccoli, cauliflower, bacon and some shredded cheese, and pour the mixture into a baking pan. Top with more cheese and bacon crumbles, and bake!

2. Southern chicken casserole

This Southern chicken casserole takes just 30 minutes to make. To make it, start by cooking some rice. Then thinly slice chicken breasts, season, and bake them in the oven. When the chicken is cooked, cut it into small pieces and add it to a bowl with your cooked rice. Mix in heavy cream, shredded cheese and cream of chicken soup, and pour the mixture into a baking pan. Top it with more cheese, and bake in the oven until the food is cooked through and the cheese is golden brown.

3. Vegan autumn rice and veggies casserole

This perfectly cozy vegan casserole is packed with autumn veggies. Start by sautéing mirepoix (a flavor base made with diced veggies), crushed walnuts, fresh herbs and garlic in a pan for a few minutes. Then add chunks of butternut squash, pre-cooked wild rice, kale, vegetable broth, cranberries and vegan cheese. Transfer the mixture to a baking pan and bake it. Garnish the finished casserole with fried onions and enjoy!

4. Cowboy casserole with tater tots and ground beef

Cowboy casserole might not be the healthiest dish, but it sure is comforting! First, cook some ground beef, seasoning it with a variety of spices. Then sauté some chopped bell peppers and onions, mix in the cooked ground beef, and add canned tomatoes, canned corn, beef broth, barbecue sauce, corn starch, cheese and sour cream. Next, grab a baking pan and add a layer of frozen tater tots to the bottom. Pour in the beef mixture, then top with more tater tots and bake!

5. Classic tuna casserole

Few dishes are as cozy as a classic tuna casserole. To make it, sauté some diced onions. Then add butter and flour to make a thick sauce. Add in milk, parmesan, canned tuna and frozen peas. Meanwhile, cook some pasta shells. When the pasta is done and the tuna mixture has thickened, mix them together and pour into a baking pan. Top with cheddar cheese, bake, and then top with bread crumbs.
