You've probably been storing olive oil wrong all along


Whether you’re a fan of stir fry or prefer salad, chances are you use olive oil at least a few times a week. But did you know this kitchen staple is dependent on its surroundings to maintain flavour?

For most, keeping their bottle of olive oil close when cooking is essential. In fact, it’s commonplace to find this oil placed conveniently beside the oven for easy access. But if this is the case for you, you’re storing it wrong.

Cooking experts at Good Housekeeping Institute revealed that warm and well-lit environments, like beside the stove, may cause the oil to take on a musty and vinegar-like flavour. If you want to preserve your oil, you need to store in a dark, cool location with the lid firmly closed.

It’s important to note that properly stored, unopened olive oil can last up to two years. However, once that bottle is opened, it needs to be used within six months.

“Unlike wine, olive oil does not improve with age. An unopened bottle can on average last two years, in the right conditions. Once opened, try to use it within six months or earlier,” wrote Angela Trofymova for the Good Housekeeping Institute.

When considering the best place to store your favourite cooking oil, consider that oxygen, light and heat are the three culprits that cause it to spoil.

“When exposed to those elements, the oil will turn rancid more quickly, taking on a mustier, more earthy flavour profile with notes of vinegar… The optimum temperature for storing oil is 14-18˚C, so keep in a cool, dry, dark cupboard, away from the heat and light. Limit exposure to oxygen. Use oil soon after buying it, and always keep it stored with a cap or lid,” wrote Trofymova.

If you’re shelling out the extra cash for extra-virgin olive oil, be sure to use it sparingly. The Good Housekeeping Institute advises against cooking with this oil and rather use it to dress salads or drizzle over pasta.
