Freezer shortcuts are a big part of my meal-planning strategy. I rely on frozen dumplings, tater tots, vegetables, pesto, and more to make flavorful dinners fast during our busy week.

Freezer meals, on the other hand? I’ve found most prepared frozen meals don’t check the many boxes that make an ideal dinner for my family. It must be vegetarian but high in protein, big enough to feed my family of four, and of course, it has to taste delicious. I’m thrilled to report that I’ve finally found a frozen dinner that has it all: Amy’s Family Size Roasted Poblano Enchiladas ($13.84 to $16.99 at time of writing).

Why I Love Amy’s Family Size Roasted Poblano Enchiladas

Let’s start with taste because if my husband and kids don’t want to eat it, any other virtues are moot. I am not exaggerating when I say this is the first frozen meal that every person at the table enjoyed unequivocally. Even more powerfully, this has remained constant each time we’ve turned to Amy’s for dinner.

If your kids are anything like mine, historical precedent is worthless when it comes to what they’ll enjoy eating. Luckily, we’ve had these enchiladas enough times to rave reviews that I can heat them up with confidence they’ll be well received.

I look forward to our Amy’s nights, too. The enchiladas taste surprisingly fresh, a credit to an ingredient list remarkably similar to how I imagine I’d make these at home. It includes organic corn tortillas, tofu, vegetables, cheese, and other items regularly stocked in my kitchen. My favorite part is the creamy poblano sauce, bursting with vibrant fire-roasted poblano flavor.

Because of the wholesome ingredient list, I also feel good after eating these enchiladas, and I appreciate that they have more protein than most frozen vegetarian meals, thanks to the addition of tofu in the filling.

A Family-Sized Upgrade

I’d seen Amy’s Roasted Poblano Enchiladas before, but it wasn’t until they recently launched the family size that I finally gave them a try. The smaller version would require me to buy at least one box per person, which is too pricey.

With the family size, I can either buy one tray and fill out the meal with a green salad or, if we’re ravenous, I’ll serve two family-size trays. The latter option is admittedly decadent, but somehow we manage to finish every last drop of sauce.

Amy’s Family Size Roasted Poblano Enchiladas are currently available at Walmart and Kroger and on the Amy’s website. I pick a couple up almost every time I visit the grocery store.
