These 3-Ingredient Meatballs Have the Most Delicious Holiday Spin
Use your Thanksgiving leftovers for an easy weeknight meal.
Turkey and stuffing are forever linked together. Whether you actually stuff a turkey with the bread mixture (and make sure it cooks through safely) or you cook the stuffing outside the turkey, you can’t have one without the other on Thanksgiving. We’re pretty sure it’s against the law.
Though this combo is great any time of year, cooking an entire turkey can be daunting—and takes hours that we usually don't have outside of holiday time off. So, how can we get big Thanksgiving flavor any night of the week? With a handful of ingredients and a little imagination. Swap in ground turkey, prepared stuffing, and a binding agent, and turkey and stuffing are yours for the taking with a fraction of the effort.

How to Make Turkey and Stuffing Meatballs
The best thing about this recipe is that it uses any stuffing you prefer. If you have leftover stuffing from Thanksgiving or another holiday meal, you can use that. Or, you can mix up a package of store-bought stuffing mix and use that as the starring ingredient for these tender meatballs. Because the stuffing will already pack plenty of seasoning, you won’t need to add extras.

Ingredients:
1 pound of ground turkey
3 cups of prepared stuffing
1 egg, beaten
Directions:
Preheat the oven to 375 degrees F.
Add ground turkey, stuffing, and egg to a large mixing bowl. Mix the ingredients together until they are all well incorporated. (If you feel like you need a little more moisture, you can add milk or broth, a little at a time until the mixture is moist enough to form into meatballs.)
Roll 16 to 20 individual meatballs.
Place on a baking sheet and bake for 20 minutes or until they are fully cooked. (Turkey should be cooked to 165 degrees F.)
The best way we can think of to serve these simple meatballs is to make buttery mashed potatoes and serve the meatballs right on top. Pour hot turkey gravy (jarred is fine) over the whole thing and enjoy the most comforting of comfort foods.
