Start dinner on a green note with this vibrant kale-and-butternut-squash salad from Northern Spy in New York City, decadently sprinkled with almonds, finely chopped aged cheddar and shaved Pecorino.

Next up: the soup course. We favor this cream-less cauliflower number, which is thick and velvety thanks to a liberal amount of yogurt. A swirl of coriander, turmeric, and cumin add depth, while a sprinkle of chili powder produces a fiery finish.
