Ingredients

  • 3 lb.

    mixed apples, peeled, cored, chopped

  • 1/4 c.

    pure maple syrup or sugar (optional)

  • 2 tbsp.

    apple cider vinegar or lemon juice

  • 1/4 tsp.

    ground cinnamon (optional)

  • 1/4 tsp.

    kosher salt

Directions

  1. In a medium Dutch oven or pot over medium heat, combine apples, syrup (if using), vinegar, cinnamon (if using), salt, and 3/4 c. water. Cover and cook, stirring occasionally, until apples are cooked through and tender, about 25 minutes.

  2. Uncover and continue to cook, stirring occasionally, until liquid is reduced by about half, about 10 minutes more.

  3. Transfer cooked apples and any remaining liquid to a food processor and process until smooth, 1 to 2 minutes total. Let cool, then transfer to an airtight container and refrigerate until ready to serve.
