While there are many types of bread that will work for making French toast, thicker slices are generally better than thin slices. And stale bread soaks up liquids better than fresh bread, which is why it’s great for whipping up bread pudding.
One popular bread for making French toast is brioche, which uses more butter and eggs than other types, so it is ideal for a recipe in which bread is soaked in an egg-milk custard. Challah, which is also rich in eggs but is made with oil in place of butter, is also a great choice. Your weekend wake-up won't be the same once you try French toast with a loaf like brioche. It’s soft with a dense crumb (pattern of holes in a slice), which is excellent for absorbing custard and searing on the stovetop until golden on the outside and tender on the inside. Whether you're baking your French toast in casserole form or cooking it on the pan or griddle, your tastebuds will thank you.
If you think challah and brioche are too rich for French toast, other options include French bread, sourdough, or any bigger, sturdier loaves of white bread from your local bakery.
