Ingredients

chopped rotisserie chicken

(4-ounce) can chopped Hatch chiles
6 oz.
Monterey Jack cheese, grated (about 1 1/2 cups)
Kosher salt and freshly ground black pepper
3 tbsp.
unsalted butter, at room temperature

(8 1/2-inch) flour tortillas
Directions
Stir together chicken, chiles, and cheese in a bowl. Season with salt and pepper. Butter one side of tortillas, dividing evenly. Place tortillas, butter side down, on a work surface. Spread mixture on one side of each tortilla, dividing evenly. Fold tortillas in half.
Cook, in batches, in a large skillet over medium heat, flipping once, until golden brown, 6 to 8 minutes. Cut into triangles and serve immediately.
