This new Eagle restaurant is ‘excited’ to be open where two others closed since 2022
The new year brings fresh hope for an Eagle building that sat empty in 2023.
Family-style Mexican restaurant Pueblo Lindo opened Thursday at 1396 E. State St. It’s the third location for the Idaho brand, which also operates in McCall and Meridian.
It’s also the third concept in four years at the Eagle dining destination. After a run of more than two decades, Buster’s Sports Bar & Grill shuttered there in 2022. Local hamburger joint Holy Cow Idaho gave it a yearlong whirl before following suit.
At 2,900 feet, the restaurant offers traditional sit-down table service. During warmer months, diners will gravitate to the building’s familiar outdoor patio.
“We’re excited to bring the authentic Mexican flavors you love from McCall and Meridian to our third location,” Pueblo Lindo wrote on social media. “Join us for fresh, delicious dishes, margaritas and warm hospitality.”
In Meridian, Pueblo Lindo has earned 4.6 out of 5.0 stars from 740 Google reviews. The newest opinion, from a Local Guide, calls it, “The absolute best Mexican food!
“I got tacos al pastor and carne asada. The squeeze bottle roasted salsa they serve with tacos is amazing. ... Finally a place that checks all the boxes!”
Meridian patrons will find a similar food menu in Eagle. Pueblo Lindo has posted it (albeit without prices) on its website.
Normal restaurant hours are 11 to 9 p.m. Monday through Thursday, 11 a.m. to 10 p.m. Friday and Saturday, and 11 a.m. to 9 p.m. Sunday. Winter hours might vary, the website adds. A lunch menu is available from 11 a.m. to 2 p.m. Monday through Thursday.
