Your Easter Spread Needs These Lemon-Blueberry Brie Bites

Bite-sized, blueberry, and brie: Were four words ever better or more delicious together? Enter this easy, perfect-for-spring appetizer. With golden-brown pastry (thank you, crescent dough!), gooey cheese, jammy blueberries, and crunchy almonds, these bites are perfect for an impromptu gathering or to kick of your Easter dinner.

For the fruit filling, we use a simple, no-cook blueberry compote. Tossing halved blueberries with a little sugar helps draw out the fruit’s juices and fresh lemon zest adds bright citrus flavor. Halved raspberries or blackberries are a great option if blueberries aren’t available (and if it’s fall, cranberry sauce and brie are everything).

Before serving, garnish the bites with fresh lemon zest, thinly sliced mint, and a drizzle of honey for an easy, elegant finish.

Ingredients

  • 1 tbsp.

    granulated sugar

  • 2 tsp.

    finely grated lemon zest, plus more for serving

  • 1 c.

    fresh blueberries, halved

  • Cooking spray

  • All-purpose flour, for surface

  • 1

    (8-oz.) tube crescent dough

  • 1/3 c.

    roasted salted almonds, finely chopped

  • Thinly sliced fresh mint leaves and honey, for serving

Directions

  1. In a small bowl, using your fingertips, rub sugar and lemon zest together until sugar is fragrant. Add blueberries and toss to coat. Let sit, stirring occasionally, 10 minutes.

  2. Meanwhile, preheat oven to 375° and grease a 24-cup mini muffin tin with cooking spray. On a lightly floured surface, roll out crescent dough to a 12" x 8" square and pinch together seams. Cut into 24 (2") squares. Place squares into prepared cups, pressing dough into bottom and up sides of cups.

  3. Cut brie into small pieces and place inside each cup. Spoon blueberries and any accumulated juices over brie. Top with almonds.

  4. Bake brie bits until dough is golden brown, about 18 minutes.

  5. Finely grate more lemon zest over bites. Sprinkle with mint and drizzle with honey. Serve warm.
