Our "Inside Out" Cupcakes Will Have You Feeling All The Emotions

If you’re fans of the heartwarming film Inside Out as much as we are, then you’re in for a real treat. We've taken the whimsical world of Riley's emotions and transformed them into delectable cupcakes. Each cupcake is filled with colored frosting that corresponds with the emotions featured, so you get a delightful surprise in every bite. The light and fluffy marshmallow frosting is inspired by what we imagine Cloud Town would taste like. In celebration of the second movie coming out, we added anxiety (orange!) to the mix along with the original characters—joy, sadness, fear, disgust, and anger. Make a batch of these cupcakes as you await the release of the highly anticipated sequel.

Because the prep time is heavy in this recipe, we went with a boxed cake mix to make things a bit easier. Boxed cake mix exists for a reason, and there’s no shame in using it, especially if it cuts down on time. Another way to make things easier is to make the cupcakes a day ahead. You can even go as far as scooping out the wells the day before; just make sure to cover the cupcakes tightly so they don’t dry out.

Any leftover cupcakes can be frozen for up to 3 months and enjoyed at a later time. Simply remove as many cupcakes from the freezer as you desire and let them defrost for a bit before diving in.

Ingredients

  • 1

    (13.25-oz.) box yellow cake mix, plus ingredients called for on box

  • 1 1/2 c.

    (3 sticks) unsalted butter, softened

  • 1

    (7-0z.) jar Marshmallow Fluff

  • 1/2 tsp.

    kosher salt

  • 4 c.

    (460 g.) confectioners' sugar

  • 1 tsp.

    pure vanilla extract

  • Yellow, blue, green, orange, purple, and red food coloring

  • Rainbow confetti sprinkles, for decorating

Directions

  1. Preheat oven to 350° and line 2 standard 12-cup cupcake pans with liners. In a large bowl, prepare cake mix according to package directions. Divide batter among prepared cups.

  2. Bake cupcakes until a tester inserted into the center comes out clean, 13 to 18 minutes. Let cool.

  3. Meanwhile, in the large bowl of a stand mixer fitted with the paddle attachment (or using a handheld mixer), beat butter, Fluff, and salt on medium speed, scraping down bowl as needed, until light and fluffy, 1 to 2 minutes. Slowly add confectioners' sugar and beat on low speed until incorporated. Add vanilla, then increase speed to medium-high and beat until light and fluffy, 2 to 3 minutes.

  4. Divide 1/4-cup portions frosting among 6 bowls; refrigerate remaining white frosting until ready to use. Dye each portion of frosting the color of the emotions: yellow for joy, blue for sadness, green for disgust, orange for anxiety, purple for fear, and red for anger. Transfer each colored frosting to 6 separate resealable plastic bags.

  5. Using a 1/2-teaspoon measuring spoon, scoop out a 1/2"-deep well in the center of each cupcake. Cut a 1/2"-wide hole in one corner of each plastic bag. Fill 4 cupcakes with one colored frosting for a total of 24.

  6. Frost cupcakes with reserved white frosting. Decorate with sprinkles.
