Moscow Mule Sorbet Is The Frozen Version Of Our Favorite Cocktail

Ingredients

  • 1

    (16-fl.-oz.) bottle light corn syrup

  • 1 c.

    fresh lime juice (from 6 to 8 limes)

  • 1 c.

    ginger beer

  • 1/8 tsp.

    mint extract (optional)

  • Kosher salt

Equipment Needed

  • An ice cream maker

Directions

  1. Freeze bowl of ice cream maker according to manufacturer's instructions.

  2. In a large bowl, whisk corn syrup, lime juice, ginger beer, mint extract, and a pinch of salt until combined. Refrigerate until well chilled, at least 1 hour or up to overnight.

  3. Stir chilled sorbet base, then transfer to bowl of frozen ice cream maker. Churn according to manufacturer’s instructions until sorbet is creamy and smooth and the consistency of soft serve.

  4. Transfer sorbet to an airtight container, cover, and freeze until solid, at least 6 hours or up to 1 month.
