One of the World’s Best Restaurants Is Hitting the Road With a 12-Course Omakase Dinner
One of the world’s best restaurants is going on the road next year.
SingleThread, based in Healdsburg, California, is taking its Michelin three-star bona fides to Utah and New York in early 2025, for a series that it’s calling ThroughLine. Husband-and-wife duo Kyle and Katina Connaughton have dreamt up an immersive dinner experience, combining the culinary prowess they’ve become known for with cinematic elements.

The series builds on something SingleThread started in early 2024, when the restaurant brought TitlePage to the Lodge at Blue Sky in Park City, Utah. ThroughLine will indulge diners in a 12-course omakase-inspired seating, paired with an eight-part film series directed by the Emmy-nominated Justin Taylor Smith. Each short film will explore the ingredients, farms, fisheries, and artisans that make up every course.
“ThroughLine gives our guests a closer look at the stories behind the dishes we create at SingleThread,” Kyle Connaughton said in a statement. “Through a cinematic lens, we want to share the journey of the ingredients before they reach the kitchen. It starts at our farm and each film introduces the people and partnerships that contribute to each dish. It’s all about connecting our guests to our food systems, ingredients, and the dedicated work and collaboration that goes into every experience we create.”
ThroughLine’s first experience will take place once again at the Lodge at Blue Sky, from February 13 to 17 and February 20 to 23. Later in the spring, the series will move to Wildflower Farms in the Hudson Valley, on April 26 and 27. New York City will round out the festivities at a date and location to be announced. And in partnership with Audi, the marque is providing transport to guests via the all-electric Q6 e-trons. (SingleThread has also partnered with Miele, OpenTable, and Visa for the experience.)
Each dinner features just 14 seats, ensuring an intimate experience for all involved. Tickets are priced at $400, while wine pairings will be offered for an additional cost. And for those joining at the Lodge at Blue Sky or Wildflower Farms, the properties are offering dedicated packages in conjunction with the ThroughLine experience.
As two of the most powerful people in American fine dining today, the Connaughtons have already done more than enough to shape the U.S. culinary landscape. ThroughLine is a new innovation for them—bringing together dining and documentary filmmaking—and one that they hope to make permanent in some way in the near future.
