Cabbage is a humble vegetable; it's always cheap and readily available. While you may often think of it as the base of a crisp coleslaw or the standard side for corned beef, it doesn't take much to turn it into a dinner party-worthy side dish. Our latest cabbage recipe transforms the vegetable into a crispy, garlicky masterpiece that, according to recipe developer Renu Dhar, "will make anyone fall in love with cabbage."

Why We Love Crispy Cabbage

If you’ve ever had flimsy, mushy cabbage as part of a St. Patrick’s Day feast and vowed never to eat the vegetable again, let this Parmesan-Crusted Roasted Cabbage convince you to give it another try. We love crispy cabbage because it adds more textural complexity to the vegetable. While you can certainly get tender cabbage by steaming it, baking it in the oven allows it to get that tender texture inside with a crisp exterior for contrast.

To get crispy cabbage, we turn to the oven and cook the cabbage at high heat—450 degrees F in this case. Cooking at a high heat allows the cabbage to brown and caramelize. When caramelized, it develops a golden brown color and sweeter flavor as sugars break down. Plus, a Parmesan paste (made with a few seasonings, oil, and Parmesan cheese) spread on one side of the cabbage wedges creates a cheesy crust as the cabbage bakes in the oven, adding more crispness to the overall dish.

How to Make Parmesan-Crusted Roasted Cabbage

Start by gathering all your ingredients. A huge perk of this recipe is that it only calls for three ingredients plus some seasonings. Check out the complete recipe for the full ingredient list, but here's a quick rundown of what you'll need to make Parmesan-Crusted Roasted Cabbage:

  • Parmesan cheese: Salty Parmesan adds flavor and contributes to a crispy cheese crust on each wedge of cabbage.

  • Olive oil: Olive oil binds the Parmesan and seasoning mixture to create a spreadable paste on the cabbage.

  • Seasonings: Dried Italian seasoning, garlic powder, kosher salt, and paprika create a light but impactful flavor for the cabbage.

  • A small head of cabbage: Cut the cabbage into eight equal-sized wedges so each can get perfectly browned and cooked through for a tender bite.

While the oven preheats to 450 degrees F, combine Parmesan cheese, Italian seasoning, garlic powder, salt, and paprika to create a paste.

Spread the Parmesan mixture evenly on one side of each cabbage wedge, and arrange the wedges paste-side down on two parchment paper–lined baking sheets. Bake the cabbage for about 16 to 18 minutes, rotating pans between the top and bottom racks halfway through. Remove the cabbage from the oven and let sit for two minutes, then flip the wedges cheese-side up and bake for another six to eight minutes. The cabbage will be tender inside and perfectly crispy outside.

Serving Suggestions

  • Serve it with a stovetop main dish, such as these Pan-Roasted Chicken Breasts, so you can cook your main dish while the cabbage is roasting in the oven.

  • Use some of your Parmesan-crusted roasted cabbage in a warm grain bowl or salad. For more texture, add toppings like roasted chickpeas and fresh herbs.

  • Serve it as part of an updated take on corned beef and cabbage.

  • Chop it up and use it to make a kitchen sink stir-fry or breakfast hash using leftover veggies.
