Pho, banh mi, boba: This Kansas City area Vietnamese and Thai restaurant has opened
At Lee’s Summit’s newest Vietnamese and Thai restaurant, Pho Noodle Go, the pho’s beef broth is boiled for 24 hours.
That’s the authentic way to do it, said owner Kent Pholcharoen.
More labor-intensive and time-consuming than a pre-made batch or paste that’s cooked in a matter of minutes — yes — but he thinks it’s worth it.
Pholcharoen’s restaurant opened at 1720 NW Chipman Road. earlier this month, serving pho, pad Thai, cashew nut chicken and other dishes. It’s in a former Pepper Jax Grill.
“I just like to enjoy serving friends, family and neighbors,” he said. “It’s not just about making money.”
While the main part of the restaurant is sit-down dining (also offering takeout and to-go orders), a small bar against the wall will serve coffee, boba, banh mi and Vietnamese pastries. A few pieces of equipment still need to arrive before that portion is up and going.
Pholcharoen owns Thai Spice at 1192 NE Douglas St. in Lee’s Summit, 18931 E. Valley View Parkway in Independence and 4171 Sterling Ave. He’s from Thailand, so the Thai recipes on his menu are his family’s favorites.
His wife, Jasmine Lang, is from Vietnam. He wanted Lang to have an outlet to share her cooking with the world, too.
In addition, Pholcharoen developed a software called Eatstations, which offers online delivery and cashier technology for restaurants.
Pho Noodle Go uses his technology for its menu and checkout system.
The restaurant is open from 11 a.m. to 3 p.m. and 5 to 9:30 p.m. Mondays through Wednesdays, 11 a.m. to 9:30 p.m. Thursdays, 11 a.m. to 3 p.m. and 5 to 10 p.m. Fridays, noon to 10 p.m. Saturdays, and noon to 8 p.m. Sundays.
