How to prevent your food from getting freezer burn

There's nothing more frustrating than going to defrost something for dinner and finding it's been ruined by freezer burn.

If you're not familiar with the phenomenon, it's when the water molecules in your food turn into ice crystals. These then move to the top of the food, which results in mounds of ice. Because the water has been pulled out, the food becomes dehydrated, which changes the way it tastes. Freezer burn won't hurt you, but your food won't be as tasty as it should be — and it may have less nutritional value.
