How to Make the Ritz-Carlton Lemon Pound Cake

Preheat the oven to 350°F. Measure out your dry ingredients: Use 3 cups of all-purpose flour, 1 tablespoon of baking powder, and three-fourths of a teaspoon of salt. Then, sift all of the staples together.

In a separate bowl, cream together 2 cups of softened butter and a half cup of shortening using a hand mixer. Once combined, add five eggs one at a time, mixing well after each addition.

To make the batter, add the dry flour mixture in three additions to the creamed butter mixture, alternating with 1 cup of milk. Next, combine 6 tablespoons of lemon juice and the zest of one lemon to the batter.

Bake the cake in the oven for about 55 minutes, until the top turns golden brown. You can insert a toothpick into it without any batter coming off. Let it cool for about 15 minutes before flipping the Bundt pan to release the cake.

My Honest Review of the Ritz-Carlton Lemon Pound Cake

It took about 15 minutes to prepare the lemon pound cake batter, and the process was straightforward.

Many citrus cake recipes use lemon extract, but I was excited to see that this one called for fresh lemon juice and zest, which gives it a bright flavor instead of an artificial one. You’ll experience a tender, light crumb with rich, buttery notes when you bite into it.

Next time I make this recipe, I’ll swap the lemon for oranges for a sweet citrus twist. I can also imagine this cake tasting amazing with blueberries folded into the batter. The Ritz-Carlton really knows how to create a fluffy, flavorful Bundt cake — I’m already looking forward to making it again.

Tips for Making the Ritz Carlton Lemon Pound Cake

  • Prepare your pan properly: To avoid the dreaded sticking disaster, thoroughly grease your Bundt pan, then lightly dust it with flour before pouring in the batter. This simple step will help you achieve an effortless release and save you from any headaches when it’s time to flip your dessert out.

  • Consider a loaf pan: While a Bundt cake is undeniably stunning, it can be tricky to remove from the pan. If you want to skip that stress, opt for a loaf pan instead. With fewer crevices, it’s easier to bake with and pretty much guarantees a hassle-free result.

  • Use buttermilk: Swap whole milk for buttermilk to give your cake a tender, light texture and a rich, decadent crumb.
