Having a variety of lunch options on hand makes prepping so much easier and, dare I say, a little more enjoyable. While I love staples like cold-cut sandwiches, hearty bean salads, and even stocking the fridge with childhood favorites like homemade pizza rolls and puff pastry pockets, keeping a quick no-cook option ready in my pantry means I don’t get burnt out on feeding myself or packing lunch for my fourth grader.

Why I Love Chicken of the Sea’s Wild-Caught Pink Salmon

You might already know Chicken of the Sea for their canned tuna or packets of flavored tuna that can be used for sandwiches or making casseroles. In recent years, they’ve added more variety to their tinned seafood line-up, including sardines and wild-caught Alaskan salmon. While the cans of salmon are great—I often buy them for making salmon patties—I really love having the packets of Wild-Caught Pink Salmon available for quick lunches. The salmon is tender and flavorful without any fishy flavor, making it a nice blank canvas for a variety of mid-day meals.

My favorite way to eat it is mixed with a small bit of Kewpie mayo and chopped avocado, then seasoned with a bit of rice vinegar and hot sauce. I’ll enjoy them with seaweed snacks as an ad hoc salmon hand roll. Of course, you can riff on almost any tuna salad recipe and sub salmon, including tuna melts!

Chicken of the Sea's Wild-Caught Pink Salmon packets also help me turn bits of leftovers into lunches. Even just a cup of leftover rice and a packet can become salmon and rice patties (my fourth grader’s favorite) or a single serving of salmon fried rice.
