Chances are, many of the following things are true for you: 1. You don't remember the last time you wore real pants, 2. You've been subsisting on Christmas fudge and leftover holiday ham for days, and 3. Actually, you don't entirely know what day it is. Heck, if any of those statements are true for you, you've likely found yourself in the middle of the weirdest week of the year — the week between Christmas and New Year's. To be honest, I'm not entirely convinced that time is really real during this week? And that absolutely extends to what recipes I turn to all week long.

For one, breakfast becomes a very flexible meal, and not just in terms of the timing (breakfast for dinner forever), but mixing and matching all kinds of flavor cross-overs. Whatever you do, don't be surprised when frico egg smash tacos, Hawaiian roll french toast, ramen carbonara, and pizza frittatas become a regular dinner well into the new year! Perhaps you're of the "I don't want to do any dishes ever again" and "I have so many leftovers I'm bored to death of" frame of mind? Well, you've got plenty of options. Choose something easy like a one-pot meal (like our pizza beans skillet, taco soup, or slow-cooker beef chili), something handheld in either slider form (like our Hawaiian roll sliders) or wrapped in a crescent roll (like our chicken parm pinwheels). And if you're celebrating Hanukkah (and/or your favorite sports team winning) be sure to keep the party going with a batch of our Big Mac latkes.

When all else fails, there's absolutely no shame in continuing to eat more fudge. Our espresso martini fudge is the perfect bridge between the holidays, in my humble opinion!

The best of smashed burgers, tacos, and fried eggs collide in this super satisfying breakfast. Every layer of this taco is supported by the next, from the earthy paprika-forward chorizo to the crispy cheddar frico, creamy egg yolk, and the acidic herb sauce that completes the entire package.
