Our Bee Sting Bagel Breakfast Sandwich Will Have You Buzzing

Ingredients

    slices of bacon (about 1/2 lb.)

  • 2 tbsp.

    store-bought or homemade hot honey, plus more for serving

  • 8 oz.

    cream cheese

  • 5

    scallions, trimmed, sliced (about 1/2 cup)

  • 2 tbsp.

    finely chopped jalapeños

  • Kosher salt

  • Freshly ground black pepper

  • 4

    sesame bagels, split, toasted

  • 2 tbsp.

    unsalted butter

  • 4

    large eggs

  • 4

    slices of sharp cheddar

  • Hot sauce, for serving (optional)

Directions

  1. Arrange a rack in center of oven; preheat to 400°. Spread bacon in a single layer on a foil-lined baking sheet, making sure not to overlap.

  2. Bake bacon 15 minutes. Brush with hot honey. Continue to bake until honey is caramelized and bacon is crispy, about 10 minutes more. Transfer to a paper towel-lined plate to drain.

  3. Meanwhile, in a medium bowl, combine cream cheese, scallions, and jalapeños; season with salt and pepper. Spread cream cheese mixture on cut sides of bagels.

  4. In a medium bowl, beat eggs until blended. In a large skillet over medium heat, melt butter until slightly foamy. Add eggs. Using a spatula, gently nudge cooked egg edges toward center of skillet, tilting skillet so runny eggs move toward edges. Cook, maintaining a mostly undisturbed, thin layer of egg, until just set, 1 to 2 minutes; season with salt and pepper.

  5. Top eggs with cheese. Reduce heat to low, cover, and cook until cheese is just melted, about 2 minutes more.

  6. Divide eggs and bacon among 4 bagel halves. Top with more hot honey and hot sauce (if using). Close with remaining bagel halves.
