How to Make Breakfast, Lunch, and Dinner With One Piece of Salmon

We are always on the lookout for powerhouse, budget-friendly ingredients that make meal prep easy and delicious—but never boring. Our current favorite find? Aldi's Atlantic salmon fillet.

"Buying the whole side is key," according to Senior Culinary Producer Nicole McLaughlin. Aldi's 3-pound fillet is less than $25, which is an incredible bang for your buck. To prove just how versatile this one ingredient is, Nicole used it to make a whole day's worth of tasty meals.

How to Prep the Salmon

Here's how Nicole preps the salmon for breakfast, lunch, and dinner:

  1. Remove the fish from the packaging and cut off the tip. From there you should be able to easily slide off the skin with the heel of your hand.

  2. The star of the menu (Salmon Wellington) requires the most fish, so Nicole trims off the excess from the sides, top, and bottom for the other two meals.

Start the day off strong with Nicole's homemade salmon cream cheese, which is practically made to pair with a bagel. The 5-ingredient spread features lemon, fresh dill, capers, cream cheese, and cooked flaked salmon. Bonus point: Since the cream cheese is whipped, this is also light enough to work as a dip.

Next up, we've got lunch: Nicole's salmon cake burgers. "These aren't your grandma's croquettes," she says.

The recipe is pretty much identical to her crab cake recipe but, of course, with cooked flaked salmon instead of crab. Made with just the right amount of panko breadcrumbs (you don't want to overdo it!), these lightly seasoned patties fry up beautifully crisp and tender.

"This is impressive enough for company, but easy enough for weeknight cooking," Nicole says of her gorgeous Salmon Wellington recipe.

It truly is much easier than it looks: A salmon fillet is topped with a cheesy spinach mixture, then encased in puff pastry that is baked until perfectly golden brown. The result is a magazine-worthy presentation (and succulent, flavorful salmon).
