Bring the pot to a boil, then reduce to a simmer and cook for about 2 hours. While that’s cooking, chop your potatoes, carrots, and cabbage. Once your beef is fork-tender, add potatoes and carrots and cook for about 10 minutes. Follow with cabbage and cook until all the vegetables are tender.

Remove the meat from the Dutch oven and let rest for about 15 minutes before slicing and serving with the vegetables and broth.
