Veronica Perez got into the custom cake and baked goods business the old fashioned way.

She was studying criminal justice at Columbia Basin College and began baking treats at side to earn money.

She earned her degree and got a job as an accountant. But the side job only grew when she began making custom cakes, inspired by her children’s elaborate birthday requests.

When the business took over her kitchen at home, Perez and her husband decided it was time to open their own bakery.

In May, Nanis Bakery opened in a former Subway sandwich shop at 6607 W. Canal Drive, Suite G., at Colonnade Shopping Center near Columbia Center.

The couple remodeled every inch of the old sandwich shop and opened in May. The business is both a bakery and sit-down dining spot for customers who want to eat their desserts right away.

Nanis specializes in custom cakes for special occasions, including weddings, birthday parties, graduations and more. The menu includes cookies, tortes, cheesecakes, cinnamon rolls , cupcakes and more.

Perez chose the spot on Canal after deciding she didn’t want to join a commercial kitchen, where startups can lease time but share space with others.

She said she didn’t want to share space, preferring instead to keep total control over her work space and storage facility. She and her husband signed a five-year lease and funded the venture with savings and ongoing earnings from their day jobs.

The remodel was valued at $33,000 in city building permits.
