New pizza restaurant is opening next to the beach in SLO County. What’s on the menu?

Soon, people will be able to walk along the famous Cayucos wall on Front Street, with the beach and the Pacific Ocean mere feet away — and then head for Pie in the Sky Pizza.

New owners Ellen and Jeremy Sizemore want to bring their culinary and area expertise to their Pie in the Sky Pizza party at the tiny walk-up business.

“We’ll be selling pizza whole and by the slice,” she told The Tribune, with the saucy, cheesy pies made on their own artisan pizza dough, producing a thin-crusted treat.

“It’s fermented, like sourdough,” Ellen said of their special dough.

They’re still tweaking the recipe a bit as they prepare for opening, however.

“We want it to be perfect when we open,” Jeremy said Saturday at the pizzeria.

Whole pizzas would take 15 to 20 minutes start to finish, Jeremy estimated.

But with the spectacular setting, “it’s a great spot to hang out in,” Ellen said with a laugh of the turn-around-and-enjoy-it view.

There’s been a take-out pizza joint at 156½ Front St. for years, with some of the popular haunts including Mayberry’s, Front Street Pizza and, most recently, Ocean Front Pizza. The location is about a block away from the historic Cayucos Pier and Cayucos Vets Hall.

Eventually, the new Pie in the Sky might have one or two tables outside, they said, but the idea is for customers to take their pizzas to the beach, to their motel or home, or munch on their slices as they stroll along.

The couple aren’t sure yet when they’ll be able to open.

“We’ve still got one more hoop the get through at the county,” Ellen said, but they’re hoping it will be soon.

Pizza shop owners have plenty of SLO County restaurant experience

The two San Luis Obispo County natives have lived in the county for a long time and in Cayucos since 2020, a location that’s now close to their new business.

They have three other San Luis Obispo County businesses.

Their High Tide Deli & Café sandwich-bowls-and-coffee spot at 500 Morro Bay Blvd., is next door to another of their businesses, the Rising Tide community of creatives, artists, artisans, holistic healers and entrepreneurs, according to their Instagram page.

High Tide opened in 2020.

Jeremy’s Spearhead Coffee, 619 12th St., in Paso Robles, has been roasting, grinding and brewing his own blends for about a decade.

Until the Pie in the Sky grand opening can happen, the Sizemores will keep their hungrily anxious fans updated on their Instagram page, which has been gaining lots of followers since their teaser announcement Aug. 1.
