It's my favorite gingerbread treat of the year.

Every fall, thoughts of gingerbread fill my mind. During the holiday season, you’ll find me trying to track down my mom’s favorite gingerbread tiles from Rustic Bakery before they sell out, buying kits so my girls can build and decorate gingerbread houses (so fun!), baking my own gingerbread cake, and sampling the newest gingerbread treats around.

Why I Love Trader Joe's Gingerbread Sandwich Cookies

This year, my favorite entry into the category is the box of Gingerbread Sandwich Cookies from Trader Joe’s. First of all, the rustic-chic packaging is aesthetically pleasing—these would make a great hostess gift at any holiday party. Second, the cookies themselves are adorable, two pudgy little sugar-sanded rounds sandwiching a generously thick filling of cream cheese icing.

And third, they are tasty! They’re on the soft and tender side as cookies go, and I would describe the gingerbread flavor as mild—you’re not getting hit with a ton of ginger like the TJ’s Triple Ginger Snaps—but the spices are there. It’s a pleasant, mellow blend of cinnamon, ginger, and nutmeg. With coarse sugar on top and vanilla-y frosting in the middle, they’re definitely on the sweeter side. My youngest likes hers with a glass of milk, and I like them best paired with a cup of coffee or black tea to cut the sweetness. Rooibos tea would also be a good pairing.

Trader Joe's Gingerbread Sandwich Cookies

  • Price: $5.99 for 18 sandwich cookies

  • Why I Love Them: These subtly spiced, soft gingerbread cookies are delicious and beautiful enough to give as a host gift. That is, if your family doesn't eat them all first.

The cookies are $5.99 for a 20-ounce package containing 18 cookies. I think that’s a great deal for a dessert that’s so cute and presentable! They’re small but filling—one is plenty for a satisfying treat.

My mom has yet to try these, and since she’s the gingerbread aficionado in my family, I am eager to know what she thinks! I’m guessing she might find them to be a bit on the mild side for her liking, but if you like your gingerbread subtly spiced, these will be up your alley. They’re definitely a hit in my house. We always let our kids have a little after-dinner treat if they want one, and this week they’ve been requesting these cookies nearly every evening.

These are small enough that you can add one to a bowl of ice cream as a fun little garnish. I think that would make a great no-fuss holiday dessert—picture a little bowl of pumpkin cheesecake ice cream with a sandwich cookie nestled right in there, all of it drizzled with some sea salt caramel sauce. Yes, please.
