You’ve probably heard the adage, “breakfast is the most important meal of the day.” While the designation “most” may be up for debate, there is one universal truth: Breakfast doesn't have to be boring!
Tired of yogurt and granola? Pop it into the freezer for breakfast popsicles instead. If you're flapjack out of ideas aside from pancakes and bacon, consider firing up the grill and using it to make breakfast. If you’re scrambling for a new breakfast idea, consider making breakfast stuffed bell peppers. It’s kind of like an omelet… but inside a bell pepper!

Breakfast stuffed peppers
Grab your favorite color of bell pepper, a few eggs and your favorite egg accoutrements and get ready for a delicious breakfast!
Preheat the oven to 375ºF.
Cut the top of the pepper off or core it and remove the stem. Clean out the guts and seeds.
Make sure the pepper can stand upright. If it’s wobbly, trim the bottom so it’s stable. Be careful not to cut a hole in the bottom.
Crack eggs into a bowl. 2-3 eggs per pepper is recommended.
Add any precooked meats, vegetables and cheeses to the eggs. Season to taste and then whisk the ingredients together.
Pour the mix into the peppers, but do not fill the peppers all the way up. The eggs need room to eggspand while cooking.
Bake for 40-45 minutes or until the eggs are set.
Stuffed peppers are not only a fun way to eat your breakfast, they can also be easily customized for larger crowds so everyone can enjoy them with their favorite ingredients.
