Rattlesnake Pasta Is So Good, Fans Say It’s a ‘Keeper in Our Rotation’
This pasta is ssss-so good.
Allrecipes has no shortage of obscure but delicious recipes on the website. Ever heard of Funky Frito Fruckies? You need to try it. What about Armadillo Eggs or Chicken Riggies? These recipes aren’t just a way to shake up your average meal. They are tasty ways to have fun with food and bring a little surprise to yourself and others.
Cooking is all about experimentation, and one pasta recipe takes this to a whole new level. It uses meat you’ve probably never eaten—rattlesnake—to create a comforting pasta unlike any other. And Allrecipes members who have tried the recipe are singing its praises.
What Is Rattlesnake Pasta?
This recipe is like the name says. It's a pasta dish made with rattlesnake meat, served over a bed of fresh vegetables and pasta. If you can resist the urge to squirm, this recipe is comforting, a little spicy, and one worth adding to your rotation.
Rattlesnake has a double meaning. Uno Pizzeria & Grill, the famous Chicago pizza chain, has a pasta recipe by the same name that uses chicken instead of actual snake meat. What gives their recipe a “rattlesnake bite” is the addition of sliced jalapeños to the pasta. Ever had a spicy Alfredo? That's essentially the meal.
You’re not alone if your first thought is “Where do I buy rattlesnake meat?” If you don’t live near a forest and have the very necessary snake-wrangling skills needed to catch a rattlesnake, this meat is harder to acquire. Like Uno, plenty of Allrecipes members substitute chicken or sausage for snake meat—and the result is just as delicious.
That said, some establishments like butcher shops or game meat stores do sell snake meat. So, if you want to try the recipe as-is, there are more ways than you might think to buy prepared rattlesnake meat.
Ultimately, this is a flavorful, spicy pasta with an excellent cream sauce and a hearty serving of fresh vegetables. Whatever meat you choose is a matter of preference, but the pasta will delight nonetheless.
"Rattlesnake adventure at the family reunion. We went from woods to table in 2 hours. We looked on Allrecipes, and this was the only recipe. It was delicious, the only substitute we made was fresh hot pepper flakes instead of jalapeño."

How to Make Rattlesnake Pasta
While making an obscure pasta like this may seem difficult, this recipe is as simple as any other. You’ll need your favorite pasta noodles, rattlesnake meat, and the ingredients for the vegetable sauce.
Start by cooking your pasta noodles until tender but still firm to the bite. The noodles should be slightly undercooked since they will continue to cook when combined with the vegetable sauce in the pan.
Next, add mushrooms, zucchini, squash, and onions to a pan until vegetables are heated through. Stir in heavy cream and the cooked pasta, allowing the ingredients to simmer for a few minutes. Then add the flavor makers, which is what brings everything together: jalapeño, mustard, Cajun seasoning, and garlic. Follow with cheese and diced tomatoes, then reduce heat to low and keep warm while you cook your protein of choice.
To cook rattlesnake, heat oil in a skillet. Dredge rattlesnake meat in flour and fry until cooked through, around 5 minutes. Then, plate your pasta and top it with the snake fillet. For those who don't have a high tolerance for spicy foods, simply leave out the jalapeño or substitute it for a milder pepper.
