Upgrade Boring Burgers with This Unexpected Topping

large beets (about 1 pound)
1/4 c.
olive oil, divided

80/20 ground beef

hamburger buns, halved
Butter lettuce, crumbled blue cheese, sliced red onion, ketchup, and mayonnaise, for serving
Directions
Preheat oven to 300°F. Line a rimmed baking sheet with aluminum foil. Peel and thinly slice beets (about 1/8-inch thick) using a mandoline, or very carefully with a sharp knife. Toss together beets and 2 tablespoons oil in a bowl. Season with salt and let sit for 15 minutes. Drain off any liquid, then arrange beets in a single layer on prepared baking sheet. Bake until crispy, 45 to 55 minutes. Cool completely.
Form beef into 8 (1/2-inch thick) patties. Season with salt and pepper. Heat 1 tablespoon oil in a large cast-iron skillet over medium-high heat. Add half the burgers and cook, undisturbed, until the bottom is crispy, 2 to 3 minutes. Flip and cook until desired doneness is reached, 2 to 4 minutes for medium-rare. Repeat with remaining oil and burger patties.
Arrange burgers on the bottom halves of the buns. Top with crispy beets and desired toppings. Serve immediately.
