Eat Dessert For Breakfast With This Air Fryer Baklava Granola

Ingredients

  • 1 c.

    old-fashioned oats

  • 1/2 c.

    chopped raw walnuts

  • 1/3 c.

    honey

  • 3 tbsp.

    coconut oil, melted

  • 1 tsp.

    ground cinnamon

  • 1/2 tsp.

    kosher salt

  • 1 c.

    chopped roasted pistachios, divided

Directions

  1. In a large bowl, combine oats, walnuts, honey, oil, cinnamon, salt, and 3/4 cup pistachios.

  2. Line an air fryer basket with a small piece of parchment, leaving some of the vent holes in the basket exposed. (You can also use an air fryer basket liner.) Add oat mixture in a single layer.

  3. Cook oats at 325°, stirring halfway through, until deep golden brown and mixture is fragrant, 15 to 18 minutes. Stir in remaining 1/4 cup pistachios. Let cool in air fryer 15 to 20 minutes.

  4. Break into small pieces. Granola will harden as it continues to cool. Transfer to an airtight container and store up to 2 weeks.
