This Popsicle Spritzer Is The Best Way To Enjoy Your Drink Poolside

Nothing says summer quite like a spritz. Whether it's made with Aperol or St. Germain, spritzes are one of the few times where it’s socially acceptable to fill your wine glass with ice. But as much as we love sipping on a cold, low-ABV beverage to beat the heat, watching the ice rapidly melt and water down our cocktail is less than ideal.

Enter: the poolside popsicle spritzer. We swap the plain old ice in a spritz for a homemade boozy pop. As it melts, the pop infuses your drink with sweet summer flavors all while keeping it cold. So feel free to set it down during a day at the pool or at any outdoor gathering—this spritz only gets better the longer it sits.

This recipe leans into the sunny tropical vibes with mango, pineapple, and fresh lime slices as the base of our pop. And to keep the good times going, we spike the pops with a little bit of vodka. You might be tempted to pour a little extra liquor into the pop base, but we don’t suggest you stray from that part of the recipe. Alcohol doesn’t freeze, so altering our ratio will prevent your pop from fully solidifying.

Everything else about this pop is fully customizable. Feel free to use this base recipe as a jumping-off point for your favorite summer flavor combinations: strawberry lemonade, watermelon agua fresca, peach basil—the world’s your oyster! You can also experiment with the booze you include too.

The frozen pops get placed directly into a wine glass filled with sparkling wine and club soda. Prosecco is a great, affordable option that works well in a spritz, but you can use any bubbly wine of your choice. We also love cava, rosé, and pét-nat in this recipe.

The best part? You can make the pops and store them in an airtight container in the freezer for up to 1 month! So whenever you’re in the mood for a spritz, you can just pull one from the freezer and drop it into your wine glass for a low-effort summer cocktail.

Ingredients

  • 1 1/2 c.

    pineapple juice

  • 1/2 c.

    mango juice or nectar

  • 2 oz.

    vodka

  • 1

    lime, thinly sliced into rounds

  • 1

    (750-mL) bottle sparkling white, rosé, or orange wine

  • Club soda, for serving

Directions

  1. In a medium bowl or measuring cup, stir pineapple juice, mango juice, and vodka.

  2. Place 1 to 2 lime slices into 6 (4-oz.) pop molds. Carefully fill each mold with pineapple juice mixture. Cover and insert sticks. Freeze until solid, at least 4 hours or up to overnight.

  3. Pour 4 oz. sparkling wine into 6 wine glasses. Top with a splash of club soda. Place a popsicle into glass and serve immediately.
